Bean to Bar is a process which makes chocolate in the most natural and healthiest manner possible, with minimal chemical and mechanical intervention. The idea is to make chocolate directly from beans rather than from cocoa mass or compound. Most mass producers add stabilisers, emulsifiers and preservatives, in order to avoid Bean-to-Bar process. • Coco pods are harvested from Tropical Rain forest Regions (these beans are from Idukki and Malabar in Kerala). • The extracted beans are then fermented to develop flavours of chocolate in the beans naturally. • These fermented beans are then dried, roasted and cracked to get coco nibs. Coco Nibs are crushed and grounded with a sweetener (in our case, dates) and then conched to develop more flavours and reduce the acidity of the chocolate. • The chocolate is tempered to get the desired shine, snap and smoothness post moulding.
No added sugar simply means that the product contains "no refined sugar" and no sugar from Sugarcane as a source. These chocolates are sweetened by dates, a natural sweetener with a low Glycemic Index. Natural sugar from dates is unrefined and contains fiber. Other sugar-free chocolates are often made with substitute sweeteners such as maltitol, stevia, or Fucto-oligo-sacchrides.

Dates sweetened chocolate are sweetened with Dates, that are naturally sweet and contain natural fiber, whereas regular chocolates are either sweetened with harmful artificial sweeteners (that come with an advisory) or with refined sugar (which has very high glycemic index and has zero fiber).

We source our Coco Beans from Idukki region of Kerala (India), these beans have a high good fats content (which gives a smooth mouthfeel to the product), and also have a mild spicy, fruity flavour.
Dates have low Glycemic Index, contain fiber and are rich in micronutrients such as magnesium, potassium, iron and zinc. They go through minimal processing before they are used in our product, whereas sugar and jaggery are far more refined, contain very low fiber, and have a higher Glycemic index.
We source our Coffee Beans from Blue Tokai. These beans are originated from Biligiriranga Hills in Karnataka, perfectly roasted at a medium dark level, and with tasting notes of Dark Chocolate, Figs, Roasted Almond.
