Bean to Bar is a process to make chocolate in the most natural and healthiest manner possible, with minimal chemical and mechanical intervention. The idea is to make chocolate directly from beans rather than from cocoa mass or compound. Most mass producers add stabilisers, emulsifiers and preservatives, which a Bean-to-Bar process avoids.
- Coco pods are harvested from Tropical Rain forest Regions (these beans are from Idukki and Malabar in Kerala).
- The extracted beans are then fermented to develop flavours of chocolate in the beans naturally.
- These fermented beans are then dried, roasted and cracked to get coco nibs. Coco Nibs are crushed and ground with a sweetener (in our case, dates) and then conched to develop more flavours and reduce the acidity of the chocolate.
- The chocolate is then tempered to get the desired shine, snap and smoothness post moulding.
No added sugar simply means that the product contains "no refined sugar" and no sugar from Sugarcane as a source. It however does not mean that the chocolate contains no sweetener. These chocolates are sweetened by dates, a natural sweetener with a low Glycemic Index. Natural sugar from dates is unrefined and contains fiber. Other sugar-free chocolates are often made with substitute sweeteners such as maltitol, stevia, or Fucto-oligo-sacchrides.
Our Milk Chocolate do not have any added sugar, it only contains natural sugar. We recommend consumption in moderation. However, its advisable to consult one's doctor before consuming any product, to minimise risk.
Dates are naturally sweet and contain natural fiber and are loaded with micro-nutrients such as magnesium, pottasium and iron. Other chocolates are often sweetened with harmful artificial sweeteners (that come with an advisory) or with refined sugar (which has very high glycemic index and has zero fiber). We have taken painstaking effort to source Cocoa Beans which pair perfectly with dates - such that these Dark Chocolates will hardly taste different from the real deal. Since dates are fibrous, we also grind our chocolates for almost 4 times as long as regular chocolate.
No, this chocolate is not vegan since it contains whole milk powder which is derived from an animal source.
We physically dehydrate whole A1 cow milk and make the milk powder. There is no drying agent or anything artifical added to this, just dehydration.
Whole milk powder is obtained by removing water from pasteurized, homogenized whole milk through evaporation without removing its nutrients and is 100% clean. The difference between these two is that skimmed milk powder is obtained by removing the fat from milk.
The Shelf life of this product is 9 months.
